Wiston Estate Rosé 2011 English Sparkling Wine

The Wiston Estate has been owned and managed by the Goring family since 1743. Its 6000 acres straddle the chalky slopes of the South Downs. The Vineyard planted in 2006 are situated on the South facing chalk slopes of the South Downs, the three traditional varieties of Chardonnay, Pinot Noir and Pinot Meunier are sited on a peri-glacial dry river valley on the Upper Cretaceous Chalk, which closely resembles the physical and chemical composition of the world renowned Côte de Blancs in Champagne.

There are no herbicides sprayed on the soil and Wiston uses the traditional Coquard press, one of only four outside of France and is unique to the UK. Its large surface area and exceptionally gentle pressing enables extraction of the very highest quality, so they can maximise the purity of the juice, followed by minimum intervention in the winemaking process so the wine can best reflect its vineyard’s origin.

The label was inspired by the story of two families coming together. It combines the colour and intensity of Pip's South African nature with Harry's family heritage and English design. The intricate detail replicates the plasterwork of the Great Hall at Wiston House, commissioned by Sir Charles Goring in the mid-18th century, with the eagle carrying the ribbon of grapes and flowers.

The juice obtained from the three varieties of grapes used in the blend were fermented separately in a mixture of older Burgundy barrels with specially selected yeasts. The wines were then rested on their lees for several months until springtime. Because of the nature of the harvest, the decision was taking to block malolactic fermentation. Chardonnay, Pinot Noir and Pinot Meunier were then carefully blended together, along with 15% reserve wine from the 2010 vintage. First disgorgement took place on 31st July 2013.

This English Sparkling Rosé has an abundance of raspberries and strawberries on the palate combined with an acidity finish creates a finish that is long lasting.

“Both the fruit and the aromatic foliage of wild raspberries rise first from the glass. They are followed by richer, delicious strawberry and cream notes, with hints of almond patisserie and strawberry shortcake. The palate is resonant with yeasty, rounded autolytic notes that frame the wonderfully wilful English hedgerow character. The mousse is lively but soft and the finish long and echoing.”
