Champagne Billecart-Salmon was founded in 1818 following the marriage of Nicolas-François Billecart and Elisabeth Salmon. Located in Mareuil-sur-Aÿ near Épernay, the House remains family-owned, today led by seventh-generation Mathieu Roland-Billecart.

Chef de Cave François Domi retired in 2016 after 30 years, succeeded by Florent Nys, who joined in 2005. Vineyard management is overseen by Denis Blée. Together with sixth-generation François Roland-Billecart and Antoine Roland-Billecart, they form part of the seven-member tasting committee guiding the House style.

In the 1950s, Jean Roland-Billecart pioneered low-temperature fermentation in stainless steel - now a hallmark preserving fruit freshness. Today, wines are fermented in stainless steel, temperature-controlled large oak casks, small oak barrels, or a combination, depending on the cuvée.

By 2020, production drew on 300 hectares: 100 hectares estate-owned and certified organic in 2025; 100 hectares under contract (herbicides and chemical fertilisers eliminated in 2019); and 100 hectares from grower partners. The vineyards span 40 crus, mostly within 20 km of the winery. In 2017, the House achieved High Environmental Value certification.

Billecart-Salmon's pure-Chardonnay vintage is a blend of Grand Cru vineyards of the Côte des Blancs. Cramant and Chouilly for its finess, Avize for its power and Mesnil-sur-Oger for its structure and longevity. Named in honour of the brother of Elisabeth Salmon, who founded the house in 1818 with her husband Nicolas Francois.

Weather: The 2012 weather has been hallmarked by many as very challenging but has created some stunning Champagne. Relatively low yields due to various weather conditions throughout the year. The winter months brought some frosts and hail which damaged the early stages of bud burst. August and September were very warm and this helped rescue and give the grapes a stunning maturity.

The grapes are all from the Grand Cru villages of the Côte des Blancs, where the hills slope gently towards the sun and the vines root down into the chalk that is not far from the surface. This gives the grapes a unique mineral character that you don't see anywhere else in Champagne. One third of the Chardonnay juice is fermented in barrels, which adds a slight spice to the aromas and oak texture to the palate and because they are older barrels, the impact of oak on the finished champagne is very subtle.

Tasting Note: On the nose, floral notes with a fine touch of hazelnut and chestnut bread. On the palate, a creamy tactile feel of beautifully focused finesse offering a full-bodied, delightful texture. Gorgeous refreshing balance with natural and baked goods flavours (puff pastry brioche, mirabelle plum tart, limoncello). This powerful, masterful yet slender wine extends its finish towards an aromatic persistence of unbelievable length (fresh mango, mandarin pulp and candied chestnuts).
Champagne Billecart-Salmon was founded with the marriage of Nicolas-François Billecart and Elisabeth Salmon in 1818. Situated in the village of Mareuil-sur-Aÿ, near Epernay. Today the family own 55% of the Maison with partners The Frey Group owning the remaining share. Their partners are owners of Château La Lagune, Paul Jaboulet Aîné in Hermitage and Château Corton-C in Aloxe-Corton. The business farms 100 hectares of their own vineyards and manage another 200 hectares from 40 crus mostly within 20 kms of the winery. Still a family-run organisation, seventh generation Mathieu Roland-Billecart oversees business. In 2016 Chef de Cave François Domi retired after 30 years with Billecart and handed over to his deputy Florent Nys who started with the business in 2005. The vineyards are overseen by Denis Blée and all of the team are members of the eight strong "tasting committee" along with 6th generation François Roland-Billecart and Antoine Roland-Billecart and fifth generation Jean Roland-Billecart.

The House style is intensely bright and fruity with an increasingly oxidative tone brought about by the recent re-introduction of oak. The Billecart-Salmon portfolio is vast but they are perhaps best known for their prestige cuvées, Cuvée Nicolas-François and Cuvée Elisabeth Salmon Rosé. In 1999, Cuvée Nicolas-François 1959 was awarded 'Champagne of the Millennium' by a committee of experts at a blind tasting session involving 150 vintages from the most illustrious champagne producers. The jewel of the estate however, is the single-vineyard champagne Clos Saint Hilare: a monstrously powerful cuvée originating from a single Pinot Noir plot sheltered by a wall of stone.

“Chardonnay grapes from Le Mesnil-sur-Oger lead the way in this all-grand-cru blend with contributions from Cramant, Chouilly and Oiry. A quarter of the wines have been vinified in oak casks. Deep, developing lemon colour. The pure, impressively intense but refined Chardonnay nose has a sweet fruit profile: confit lemon, orange blossom, toasted bread, smoke and pineapple. On the palate, huge concentration meets great minerality and a firm backbone of acidity. Youthful and well built, with heaps of delicious fruit, this age-worthy cuvée will be a pleasure to follow as it develops. Dosage: 3.9g/l”

“Originating from a mid-September harvest following a mildew-pressured season that resulted in comparatively low yields, the 2012 Blanc de Blancs Louis Salmon has produced a flamboyant wine that blossoms in the glass with aromas of lemon confit, nashi pear, quince and peach mingled with almond paste and freshly baked bread. On the palate, it is medium- to full-bodied, concentrated and profound, with ripe yet racy acidity and a layered core of fruit. Its textural attack segues into a resonant, pungently chalky mid-palate, concluding with a long, saline finish tinged with grapefruit. It is slightly more powerful than the 2013 rendition, exhibiting a subtle phenolic nuance; yet, it likewise reflects Billecart’s contemporary stylistic direction. Disgorged in January 2023 with a dosage of 3.9 grams per liter, only a quarter of the base wines were matured in barrel, while approximately 90% underwent malolactic fermentation. The blend is anchored in Le Mesnil-sur-Oger, complemented by wines from Cramant, Chouilly and Oiry.”

“The 2012 Brut Blancs de Blancs Louis Salmon is a gorgeous Champagne. Lemon confit, spice, baked apple tart, chamomile and dried flowers are all nicely amplified. The 2012 was done 75% in tank and 25% in oak, with most of the lots undergoing malolactic fermentation. There's a feeling of reserve in the 2012 that is quite appealing. This edition is terrific, but it also needs time to be at its best. I would be in no rush to open this. Low yields and a year beset by frost, hail, heavy rain, mildew and sunburn at various times produced a rich Champagne. The blend of sites in Mesnil-sur-Oger, Chouilly, Cramant and Oiry works so well. Dosage is 3.9 grams per liter. Disgorged: first trimester 2023.”

An impressive aromatic, that rich lemony sherbet on entry, overlays a layer of buttery shortbread that has been lightly toasted. This has the 2012 forward fruit charm, unctuous fruit, though restrained with hints of tropical guava. Its texture is a delight, wrapping round the palate, bright lemon, grapefruit, charred pineapple, it has richness on the palate, minerality and chalky charm. This is the best balance young Louis I have tasted.”
