Champagne Billecart-Salmon was founded in 1818 following the marriage of Nicolas-François Billecart and Elisabeth Salmon. Located in Mareuil-sur-Aÿ near Épernay, the House remains family-owned, today led by seventh-generation Mathieu Roland-Billecart.

Chef de Cave François Domi retired in 2016 after 30 years, succeeded by Florent Nys, who joined in 2005. Vineyard management is overseen by Denis Blée. Together with sixth-generation François Roland-Billecart and Antoine Roland-Billecart, they form part of the seven-member tasting committee guiding the House style.

In the 1950s, Jean Roland-Billecart pioneered low-temperature fermentation in stainless steel - now a hallmark preserving fruit freshness. Today, wines are fermented in stainless steel, temperature-controlled large oak casks, small oak barrels, or a combination, depending on the cuvée.

By 2020, production drew on 300 hectares: 100 hectares estate-owned and certified organic in 2025; 100 hectares under contract (herbicides and chemical fertilisers eliminated in 2019); and 100 hectares from grower partners. The vineyards span 40 crus, mostly within 20 km of the winery. In 2017, the House achieved High Environmental Value certification.

Billecart-Salmon's exceptional prestige cuvée rosé was created in 1988 as a tribute to the House’s co-founder. Less than 10% of the Pinot Noir is vinified as red wine. The grapes used to make the red wine are from Valofroy, a plot of old vines on the slopes of Mareuil-sur-Aÿ with a southern exposure. Billecart-Salmon Elisabeth Salmon Rosé is not always released in chronological order, but rather when head winemaker François Domi believes it is ready for release.

Weather: The 2012 weather has been hallmarked by many as very challenging but has created some stunning Champagne. Relatively low yields due to various weather conditions throughout the year. The winter months brought some frosts and hail which damaged the early stages of bud burst. August and September were very warm and this helped rescue and give the grapes a stunning maturity.

Technical Information:
Vineyards: 100% Grand & Premier Cru | Pinot Noir: Mareuil-sur-Ay, Ay & Ambonnay | Chardonnay: Chouilly, Avize, Mesnil-sur-Oger & Cramant | Red Wine: Mareuil-sur-Aÿ with southern exposure

Champagne Billecart-Salmon was founded with the marriage of Nicolas-François Billecart and Elisabeth Salmon in 1818. Situated in the village of Mareuil-sur-Aÿ, near Epernay. Today the family own 55% of the Maison with partners The Frey Group owning the remaining share. Their partners are owners of Château La Lagune, Paul Jaboulet Aîné in Hermitage and Château Corton-C in Aloxe-Corton. The business farms 100 hectares of their own vineyards and manage another 200 hectares from 40 crus mostly within 20 kms of the winery. Still a family-run organisation, seventh generation Mathieu Roland-Billecart oversees business. In 2016 Chef de Cave François Domi retired after 30 years with Billecart and handed over to his deputy Florent Nys who started with the business in 2005. The vineyards are overseen by Denis Blée and all of the team are members of the eight strong "tasting committee" along with 6th generation François Roland-Billecart and Antoine Roland-Billecart and fifth generation Jean Roland-Billecart.

The House style is intensely bright and fruity with an increasingly oxidative tone brought about by the recent re-introduction of oak. The Billecart-Salmon portfolio is vast but they are perhaps best known for their prestige cuvées, Cuvée Nicolas-François and Cuvée Elisabeth Salmon Rosé. In 1999, Cuvée Nicolas-François 1959 was awarded 'Champagne of the Millennium' by a committee of experts at a blind tasting session involving 150 vintages from the most illustrious champagne producers. The jewel of the estate however, is the single-vineyard champagne Clos Saint Hilare: a monstrously powerful cuvée originating from a single Pinot Noir plot sheltered by a wall of stone.

Chef de Cave History at Champagne Billecart-Salmon:

Florent Nys - 2016 to present - Has been working as an apprentice under the watchful eye of François since 2005

François Domi - 1985 & retired in 2016 He continued the double cold settling of his predecessor and was an early convert to technological corks.

James Coffinet - 1976 to 1985 - He introduced double débourbage, longer periods of cold settling the must, twice for between 24-48 hours at 6 Celsius followed by a cooler fermentation. These were practices borrowed from the brewing industry. Coffinet was considered one of the best winemakers of his generation. The 1982 vintage was considered his masterpiece while at BS. Look out for a rare chance to buy a well stored bottle of Nicolas Francois 1982

“Billecart-Salmon’s Valofroy vineyard in Mareuil-sur-Aÿ provides the colouring red-wine component to this deep, peach-toned cuvée. Outside of that, the grapes are grown in Chouilly, Avize, Le Mesnil-sur-Oger, Cramant, Mareuil-sur-Aÿ, Aÿ and Ambonnay. A mere 2.9% of the cuvée sees oak. Spice-laden nose, with deep Pinot Noir tones: dried apricots, sour cherry, mirabelle plums, tea and tangerine. Succulent and silky-flowing vinous palate; there is a lot of volume to it, but the wine carries itself to the long finish in a tight and seamless manner. A refined, delicious whole that already delivers a lot of pleasure. Dosage: 3.8g/l”

“Disgorged in January 2023 with dosage of 3.8 grams per liter, Billecart’s 2012 Rosé Elisabeth Salmon is a dramatic, extroverted wine, soaring from the glass with a bouquet of raspberry, cherry and pink grapefruit mingled with spices and red blossoms. These aromatics usher in a medium- to full-bodied, rich and fleshy palate that is animated by succulent yet vibrant acidity and a sweet-toned core of fruit. The wine concludes with an enveloping, perfumed finish that lingers with considerable persistence. It currently exhibits less depth than the Louis Salmon of the same vintage, leading me to place greater confidence in the latter.”

“A blend of 45% Pinot Noir and 55% Chardonnay, the 2012 Brut Rosé Cuvée Elisabeth Salmon is a real success, wafting from the glass with aromas of red berries, rose, peony, orange blood and dried flowers. Medium to full-bodied, vinous and broad, it's dense and deep with a multidimensional core of fruit, racy acids and a textural structure, concluding with a long, delicate, mouthwatering finish. This is one of the finest rosé I've tasted at this address. Kudos!”

“The 2012 Brut Rosé Cuvée Elizabeth Salmon offers up hints of red berry fruit, ginger, spice, rosewater, mint and crushed flowers. There is a feeling of classic austerity that runs through the 2012. I would prefer to cellar this for at least a few years, as it is quite reticent at this stage. Chalk, mint, white pepper and bright saline accents linger on the pointed finish. Dosage is 3.8 grams per liter. Disgorged: first trimester 2023.”

“Elisabeth Rose 2012 was effortless, juicy red fruit, so alluring, richness, concentration, delightful elegance. This is really special champagne, there is real density of fruit with that ultra-light floaty feel on the palate. Long length of flavour and will benefit at least five years more post disgorgement time.”

“Consistently great quality with harmonious flavours and some vinosity throughout the flight. The 2012 vintage has a bright salmon pink colour and depth of flavour, including floral, clementine, wild strawberry and white peach notes. It also has cinnamon cookies and vanilla touch. The creamy mouthfeel satisfies the palate, leading to a lingering finish with a touch of lemon zest. Still youthful, and expected to age longer.”
