Champagne Billecart-Salmon was founded with the marriage of Nicolas-François Billecart and Elisabeth Salmon in 1818. Situated in the village of Mareuil-sur-Aÿ, near Epernay. Champagne Billecart-Salmon is still a family-run organisation with seventh generation Mathieu Roland-Billecart overseeing business. In 2016 Chef de Cave François Domi retired after 30 years with Billecart and handed over to his deputy Florent Nys who started with the business in 2005. The vineyards are overseen by Denis Blée and all of the team are members of the eight strong "tasting committee" along with 6th generation François Roland-Billecart and Antoine Roland-Billecart and fifth generation Jean Roland-Billecart. By 2020 production had expanded with grapes now coming from 300 hectares and 40 crus mostly within 20 kms of the winery.

Billecart-Salmon Vintage is dominated by the great Pinot Noir flavours which is tempered by the elegance of the Chardonnay from the Côte des Blancs.

Weather: After a rainy but mild winter without any prolonged cold spells, spring arrived with some very localised frosts. Cool weather returned in June and the infrequent sunshine prolonged the feeling of freshness. The spring to autumn weather was bright with sunny spells and the long, hot days and cool nights during September gave the grapes excellent acidity during the harvest period. The 2008 vintage is fast emerging as one of the best since the renowned and now-legendary 2002.

Vineyards: Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne Mareuil-sur-Aÿ and Aÿ. Chardonnay from the Côte des Blancs Avize, Cramant, Le Mesnil-sur-Oger, Oger, Chouilly and Vertus
Grape Varieties: 65% Pinot Noir, 35% Chardonnay
Ageing: 9 years on the lees
Dosage: 4 g/l
Drink: Now to 2028

Tasting Note: The yellow gold hue is adorned with delicate, soft golden glints. The nose has a fruit intensity with citrus notes and nuts. A taut and seductive tactile citrus zest palate with a defined structure.

“The 2008 Brut Vintage is a delicious wine with which to explore the vintage, as it offers a lovely combination of richness, energy and early approachability. There is a sense of vibrancy that is so appealing. Orchard fruit, dried flowers, mint, spice and hazelnut all grace this enticing, impeccably rendered 2008 from Billecart-Salmon. Lovely. The blend is 65% Pinot Noir from the Montagne de Reims and the Vallée de la Marne and 35% Chardonnay from the Côte des Blancs done entirely in stainless steel. Dosage is 4 grams per liter. “Disgorged with four grams per liter dosage, the 2008 Extra Brut Vintage hasn't appreciably evolved since I last tasted it. Offering up pretty aromas of honeycomb, crisp green apple, white flowers and fresh pastry, it's medium to full-bodied, tensile and incisive, with a tightly wound core, racy acids and an elegant pinpoint mousse. I wouldn't open bottles from my own cellar for another five years, as this is evolving at a glacial pace.”
