Champagne Bollinger owns an impressive 178 hectares of vineyards, of which 85% are in Grand Cru and Premier Cru villages. Their land is spread over seven main villages: Aÿ, Avenay, Louvois, Tauxières and Verzenay planted with Pinot Noir; Cuis with Chardonnay; and Champvoisy with Meunier. Bollinger are one of the few Houses to produce the majority of their own grapes for their blends. Pinot Noir represents 60% of the House's vineyards and defines the House style: complex and powerful with remarkable structure. In 2012 Champagne Bollinger was certified High Environment Value (HEV) this certification rewards a number of environmental procedures implemented at the Maison.

La Cote aux Enfants’ is a steep sided 4 hectare vineyard established by Jacques Bollinger between 1926 and 1934, buying up over 50 plots from many owners and planted to only Pinot Noir. This historic piece of land has two defining features: the south slope, which is vinified as a still red wine, and the north-west slope, which was the previously hidden side of the vineyard used exclusively to splice the blend in La Grande Année Rosé. Since 2012 the north-west facing slope provides the grapes for the new champagne Bollinger La Cote aux Enfants Champagne.

Weather: 2014 was characterised by mild temperatures and frequent rainfall and a few weeks of high temperatures, a very solid vintage with good ripeness and acidity. Flowering began in June and summer was a combination of dry, wet and cold spells. Some regions saw some disease and Meunier in the Marne Valley didn’t have a great year and some of the Pinot Noir with its thinner skin made it more difficult for the red grapes. Harvest took place from 8th to 20th September. A year where it was necessary to select the red grapes carefully to maintain high quality. In general Chardonnay is the star of the vintage.

Tasting Note: The rich nose oozes Pinot power with its stylishly charred, vanilla, almond, pastry and toffee tones. Silky is the main descriptor for the wine’s impressively vinous and smooth texture. Intensely fruity, there is still a refreshing feeling of lightness and freshness to this tense and compact wine. The tamed phenolics have a firming effect on the long-lasting aftertaste, where sweet pastry and honey tones carry on lingering. - Tasted by Essi Avellan MW
Champagne Bollinger have been creating prestigious champagnes with character, distinguished by their elegance and complexity, since 1829. The story began when the son of a noble family, Athanase de Villermont, inherited an extensive estate in the Aÿ region. Foreseeing the extraordinary potential of the wines of Champagne, he founded the firm Renaudin-Bollinger & Cie upon meeting Joseph Bollinger, a widely travelled German and Paul Renaudin, a local man fascinated by the world of wine. Nearly two hundred years later, Bollinger are one of the biggest names in the region and are famously the preferred champagne brand of fictional British Secret Service agent, James Bond.

The House owns an impressive 178 hectares of vineyards, of which 85% are Grand Cru and Premier Cru vines. Their land is spread over seven main vineyards: Aÿ, Avenay, Louvois, Tauxières and Verzenay planted with Pinot Noir; Cuis with Chardonnay; and Champvoisy with Meunier. Bollinger are one of the few Houses to produce the majority of their own grapes for their blends. Pinot Noir represents 60% of the House's vineyards and defines the House style: complex and powerful with remarkable structure. In 2012 it was certified HIGH ENVIRONMENTAL VALUE (HEV) this certification rewards a number of environmental procedures implemented at the Champagne Bollinger vineyard, such as the large-scale reduction in the use of vine protection products, the implementation of organic pesticide treatments across the entire vineyard, energy recovery from pruning waste, the application of experimental organic farming on a section of the vineyard, and the numerous other actions carried out to protect biodiversity and embellish the vineyard.

Chef de Cave History at Champagne Bollinger:

Denis Bunner 2023 - Current | Joined Bollinger as Deputy Chef de Cave in 2013 and became the 7th Chef de Cave in 2023. He joined 6th September 2013 and the harvest started end of September. He was involved in quality control, first grape purchasing, where he implemented new techniques to control the must’s quality at the laboratory. Very quickly it gave the Maison a quick global overview of the harvest’s quality and ability to control it more efficiently. In 2014 he oversaw the jetting process, used in Special Cuvee and case by case with the vintage cuvee. Before Bollinger Denis worked at the CIVC Oenology department, where for ten years he was involved with research and a member of the Laboratory of Tasting and Sensory Analysis, this tasting has mapped out his journey.

Gilles Descôtes 2013 - 2023 | In 2003 Gilles joined Champagne Bollinger holding a string of key positions; Deputy Director of Production, Director of Vineyards and Procurement and Technical Director. During his tenure as Director of Vineyards he lead the way for more sustainable farming in the vineyards, a key achievement for the HEV certification awarded to the Maison in 2012. Long before he was chef de cave, he was part of the tasting committee so in 2013 he was a natural successor to the outgoing chef de cave in 2013. He wasted no time in recruiting his deputy, Denis Bunner joined him in September 2013 from the CIVC. Gilles Descôtes pays the greatest attention to the grape, a raw material whose excellence is essential for the production of an exceptional champagne and his philosophy can be summed up "respect for the grape, to achieve the purity of the wines." He held the position for over 10 years, guiding the House's style, protecting traditions and sprinkling a little gold dust here and there! He was part of the team for example who in 2008 introduced nitrogen to the racking process protecting the wines from oxygen. Gilles grew up in Oger in the Côtes des Blancs and spent his childhood in Champagne. He went to primary school in Oger, high school in Épernay, before continuing his studies in Reims, Paris and Montpellier. A very warm and gentle soul who was incredibly generous with sharing information. After a short illness he died in January 2023, a major loss to the house and Champagne world.

Mathieu Kauffmann 2004 - 2013 | In February 2001 he joined the winemaking team at Bollinger working alongside Gérard Liot and became chef de cave in 2004. During his time at Champagne Bollinger he was an integral part to the Maison achieving its HIGH ENVIRONMENTAL VALUE (HEV) certification, awarding key environmental achievements across the winemaking and vineyard operations. He also believed "the wood allows the must to breathe" as a result all vintage cuvee became 100% fermented in oak. Mathieu also oversaw the construction of the Mareuil-sur-Ay pressing center and the expansion of the cellars in Ay. Kauffmann started his sparkling wine career in 1992 in his native Alsace where he headed up the Crémant production of the Cave d’Eguisheim.

Gérard Liot 1989 - 2004 | A local champenoise who joined Champagne Bollinger in 1969 and twenty years later was promoted to chef de cave.

“The 2014 harvest year provided another opportunity for Côte aux Enfants to prove its potential on a cool profile, lighter year. The wine is made only from the heart of the northern-facing part of La Côte aux Enfants. In 2014 they decided to wait, and picked the plot mid-September, several days after having picked Vieilles Vignes Françaises. The rich nose oozes Pinot power with its stylishly charred, vanilla, almond, pastry and toffee tones. ”

“While one is unlikely—if not hard-pressed—to find complaints with the 2014 Blanc de Noirs La Côte aux Enfants when enjoyed on its own, it does appear somewhat less harmonious when set against the 2015 and 2013 vintages. Disgorged in February 2024 with a dosage of six grams per liter, it opens from the glass with aromas of ripe pear, beeswax and orange zest. The palate is medium- to full-bodied, vinous and incisive, with an elegantly fleshy core of fruit supported by bright acidity. Lacking both the maturity of vintages such as 2015 and 2012 and the purity of 2013, the 2014 currently seems slightly overshadowed. That said, I wouldn’t be surprised if it gains cohesion and depth with further bottle age—in which case, my current score may ultimately prove conservative. As always, the fruit hails from the northwest-facing sector of a vineyard in Aÿ, this time achieving 10.7% potential alcohol prior to harvest.”

“The 2014 La Côte aux Enfants is a powerful, resonant Champagne. It emerges from north-facing parcels in a site best known for still reds. Kirsch, leather, spice, tobacco, ginger and cinnamon all build in the glass. Readers will find a Champagne that shows the wilder, gamier side of Pinot Noir allied to a good bit of supporting structure. This is a fine effort from Bollinger. Dosage is 6 grams per liter.”

“Already after a few seconds of encountering the wine's wonderful bouquet, I could state that 2014 Bollinger La Côte aux Enfants is in many ways the very essence of "old style Bollinger". The color is very deep golden and I was blown away by how rich and mature the wine felt right away. Significantly fuller and more voluminous than both 2012 and 2013. The scent is actually as big this time as VVF and even more mature. All of this surprised me as 2014 is generally the lightest of the three. Here it was the opposite. The only thing that somehow makes me recognize the vintage is the neat and elegant note of grilled lemons I find more and more marked as the wine sounds majestically in the mouth. Perhaps this wine personifies the soul and heart of Bollinger better than any other wine. If you have been in Bollinger's cellar and in the beautiful hall where all the oak barrels are lined up, you will probably never forget the unique aroma you find there. With Bollinger's deliberately oxidative vinification, all wines from there will be strongly influenced by their external environment. When everything goes right, as it has here, this fragrance makes for a fabulously stylish personal spice. In the first place, of course, it is the micro-oxidation through the fibers of the oak barrel that leaves an impression, but also the notes of old oak with their grilled, lightly burnt and faintly smoked notes that attract autumn forest and Finnish sauna give great pleasure. From the concentrated Pinot Noir grapes, you get an extract-rich juiciness and a chewy red fruit of Gravensteiner apple, beetroot, apricot jam, strawberries and honey. From Aÿ's terroir comes an unmistakable aroma of hazelnut, honeysuckle, leather and tobacco. Can this masterpiece be stored? Sure, but does it make it better? Hardly, probably a slump will come in a few years and a new beautiful phase will only enter in ten years when new parts of the personality take shape. Different and just as good, but hardly better.”
