Description & Technical Information
-
Founded in 1846 by the brothers Jules and Auguste Devaux, today Devaux is owned by the Union Auboise, a co-operative in the Côte des Bar – the heartland of Pinot Noir in Champagne. Physically closer to Chablis than Reims or Épernay, the vines grow on Burgundian soils of Kimmeridgian marl and Portlandian limestone. Chef de Cave since 1999, Michel Parisot was named the ‘Sparkling Winemaker of the Year’ at the 2020 International Wine Challenge – an achievement that is testament to Michel’s pioneering approach to winemaking.
Vineyards: The "D Collection" wines are Devaux's very best. The grapes come from highly select, sustainably farmed parcels across 50 hectares. The majority of the vineyards are situated in the Aube on Kimmeridgian limestone-clay soils. This continental location, on the slopes of the Côte des Bars, is important; it gives the Pinot Noir richness on the nose and a long finish, while retaining finesse. The Chardonnay in the blend is grown on the fine chalky soils of the Côte des Blancs, Vitry and Montgueux ("the Meursault of Champagne") to give liveliness and elegance.
Vinification: 90% of the base wines are fermented in stainless steel, with 10% fermented in 300 litre barrels. This is followed by partial malolactic fermentation. The blend comprises 40% reserve wines (50% for the magnum), a quarter of which are from two perpetual soleras: a Chardonnay solera and a Cuvée D solera that have been going since 1995 and 2002 respectively. The remaining reserve wines are aged in large oak casks. Following bottling, the liqueur de tirage is added and the wine has a slow second fermentation in bottle and extended ageing on its lees for over 60 months (the legal minimum is 15 months). This results in a wine with a finer, more persistent mousse and greater potential for complexity. After disgorgement, the wine receives a light brut dosage of 7g/l.
Weather: The 2012 weather has been hallmarked by many as very challenging but has created some stunning Champagne. Relatively low yields due to various weather conditions throughout the year. The winter months brought some frosts and hail which damaged the early stages of bud burst. Much of August was very wet and the year was saved as the sun came out in September and rescued the vintage. Most 2012 have a great balance with purity of fruit and chalky minerality and with the potential to rival the 2002 and 2008's.

Tasting Note: The Cuvée D is rich and intense, with lively acidity bringing balance, freshness and minerality. As James Halliday describes, "there is a plethora of spiced, dried and fresh fruits, balance and freshness provided by a surge of citrussy acidity on the finish. And aftertaste." The Pinot Noir gives body and length to the wine, while the Chardonnay adds elegance and finesse.
Champagne Devaux Overview

`Coeur de Nature` is Devaux’s first fully certified organic Champagne. With a low dosage of 5g/l, it expresses the quality and freshness of Pinot Noir from the Côte des Bar and cements Devaux’s position at the forefront of sustainable viticulture in the region. The flagship ‘Collection D’ range uses only the first quarter of the press (the ‘coeur de cuvée’) and is aged for at least five years, contributing to flavour complexity and the integrated mousse. The ‘Cuvée D’ comprises a minimum of 40% reserve wines, including wine from two solera systems dating back to 1995 and 2002. The ‘Ultra D’ is a low-dosage Champagne that also contains 40% reserve wines, showing wonderful freshness and length. The ‘D Rosé’ is a blend of 53% Pinot Noir and 47% Chardonnay, with great finesse and hints of red berries. The ‘D Millésimé’ spends over ten years extended ageing on lees and displays exceptional complexity, structure and balance. Devaux age most of their reserve wines in oak barrels of different sizes, toasts and ages, which all sourced locally to minimise environmental impact. Intelligent use of oak in Devaux’s wines led Eric Label, Chef de Cave of Krug, to refer to Devaux as “the Krug of the Côte des Bar”.
The Sténopé is a collaboration between Michel Parisot and renowned winemaker from the Rhône Valley, Michel Chapoutier. Sharing the same philosophy around vineyards and respect for the land, they decided to create an exceptional Champagne that takes a snapshot of a particular vintage – the name means ‘pinhole camera’ in French. Sténopé is a blend of Chardonnay and Pinot Noir carefully selected by Michel Parisot from his preferred plots, with only a few thousand bottles produced each year.

“Notes of both Golden Delicious and Granny Smith apples fill the nose with their respective ripeness and freshness. The palate is slender, almost delicate, and vivid with the fresher rather than the riper apple notes. The mousse is fine and lively, supporting and underlining the fruit-driven yet-elegant style of this wine. The wood influence is beyond subtle and beautifully handled. An ideal, understated and refreshing aperitif.”

Josh Raynolds
“Bright yellow-gold. Ripe orange, poached pear and vanilla on the deeply perfumed nose. Fleshy and open-knit, offering pliant orchard and pit fruit flavors braced and lifted by juicy acidity. At once rich and lively, with the vanilla note repeating on the smooth, toasty finish. Just over one-third of this blend is barrel-fermented reserve wine.”
93/100
Claire Nesbitt
“Attractive nose of caramelised apples, dried apricots, pastries, shortbread, praline and some roasted vanilla bean. Some saline notes, too. Medium-to full-bodied with bright acidity and silky bubbles. Sleek and well integrated.”
90/100
Roger Voss
“The five years of aging in bottle and the 40% reserve wine have given this rich blend of Pinot Noir and Champagne great balance as well as intensity and ripeness. The wine is ready to drink.”
