Champagne Dom Perignon Overview
+
Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of elaboration in the cellars, the wine embodies the perfect balance of Dom Pérignon, the Plénitude of harmony.

Weather:The 1990 vintage experienced some frost damage early in the year, particularly during April. However, a superb summer helped the grapes thrive in their growth. Due to the long days and summer sun combined with cool nights, the grapes had excellent alcohol and acidity levels. The crop was the third largest on record and 1990 produced the ripest wines since 1959. A fantastic vintage.

Technical Information:
Vineyards: 100% Grand & Premier Cru
Grape Varieties: 40% Chardonnay, 60% Pinot Noir
Ageing: 7 years on the lees
Disgorged: July 2008
Dosage: 6 g/l
Drink: to 2030

Tasting Note: Well balanced with plenty of apricots and orchard fruits combine with honeyed notes. The mid palate is toasty but still vibrant after so long. A vintage with superb acidty levels on release and this is evident in it's superb ageing.

“Very youthful and elegant with typical Dom Pérignon finesse. It will be a pleasure to follow the internal development of the '88 and '90. A great debut for Richard Geoffroy! Toasty coffee aromas in magnum, and like a great Chablis grand cru in regular bottle.”

“Expressive, smoky and somehow even reductive - even at this age! So characterful. Bready, rich, savoury and salty - has a bit of umami / soy character - distinctive and substantial. (RH)”
