Description & Technical Information
-
Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of elaboration in the cellars, the wine embodies the perfect balance of Dom Pérignon, the Plénitude of harmony.

Weather: The 1996 vintage was a standout year: one of, if not the, best of the last twenty. A warm beginning to June followed by a cooler end provided favourable growing conditions and the weather fluctuation resulted in staggered flowering of the Chardonnay grapes. September was sunny but mild with light scattered showers creating incredible grape maturation with high sugar and acidity levels. This unique sugar/acidity balance combined with small, concentrated berries revealed an aromatic depth rarely seen in Champagne

Technical Information:
Vineyards: 100% Grand & Premier Cru
Grape Varieties: 60% Pinot Noir | 40% Chardonnay
Ageing: 7 years on the lees
Dosage: 4 g/l
Alcohol: 12.5%
Drink: Now to 2027

Tasting Note: A deep golden colour with tiny bubbles, the palate is full of lemon and citrus with a deep mineral undertone. Apples and pears on the mid palate with a spicy finish. A wonderfully balanced champagne with plenty more to give.

Jancis Robinson MW
“Just disgorged, no dosage. This will eventually be a P3 with a bit of dosage. Probably under 6 g/l.
A little severe but there is so much more buried in there than in the Moët 1996.”
91/100
Michael Edwards
“Real concentration, yet with better balance than many ’96s. A big wine, quite vinous, and in that sense not a typically fragrant Dom Pérignon of finesse. Not outstanding, but a very good wine surpassed by the subtlety of the ’98 P2.
95/100
Antonio Galloni MW
“One of the more accessible wines of the year today, the 1996 Dom Pérignon impresses for its exceptional balance and class. Lemon peel, white flowers and mint are laced together in the glass. The 1996 is in a terrific place today where it can be enjoyed or cellared for a number of years.”
