Description & Technical Information

The Plénitude (originally Oenothèque) concept has been years in development at Dom Pérignon. After studying the natural course of ageing that vintage champagne seems to undertake, the winemaking team found that, rather than improving steadily and linearly (as is the case with many wines), it develops and matures through three defined stages in its life.

The first release (P1) comes approximately 8 years after the harvest and is the style that most consumers are familiar with. The second stage (P2) takes roughly 15 years, during which time the cuvée takes a profound leap to a new quality level where it will plateau for many years in terms of improvement. Finally, the third plénitude (P3) will see the champagne ageing another 20-30 years until it reaches its ultimate peak. Initially these mature vintages were made available under limited release called “Oenothèque” but were re-branded in 2014 as “Plénitude”. Read more about the Plénitude concept here.

Weather: The 1996 vintage was a standout year: one of, if not the, best of the last twenty. A warm beginning to June followed by a cooler end provided favourable growing conditions and the weather fluctuation resulted in staggered flowering of the Chardonnay grapes. September was sunny but mild with light scattered showers creating incredible grape maturation with high sugar and acidity levels. This unique sugar/acidity balance combined with small, concentrated berries revealed an aromatic depth rarely seen in Champagne

Antonio Galloni
“Once painfully austere and unapproachable, the 1996 Dom Pérignon P2 has filled out beautifully. The interplay of vintage 1996 tension and the wine’s fruit opens up to reveal an intricate latticework of lemon confit, mint, white flowers and crushed rocks, with that classic dash of reduction that is so typical of P2 and extended aging on the lees. Complex and wonderfully inviting, the 1996 P2 is positively riveting in this tasting. In a flight of P2s, the 1996 stands out for its multi-dimensional, kaleidoscopic personality.”

“Famously acidic vintage, concentrated by a persistent north-east wind. Richard Geoffroy describes this wine as insolent. The P2 was released in 2011. ‘Everything was high.’
Very, very light pink tinge. Reductive note. Extremely tense and tight. Still lots of phenolics. Narrow. Almost painful acidity but in this wine there is enough fruit and substance – unlike many 1996s. So long! Dramatic. Really very successful.

“Wafting from the glass with notes of pear, citrus oil, wheat toast, iodine, smoke and dried white flowers, the 1996 Dom Pérignon P2 is medium to full-bodied, layered and incisive, with a chalky, tight-knit core, excellent concentration and racy acids, concluding with a long, sapid finish. The 1996 is still quite reserved, but in all its various incarnations—from the original release, the Oenothèque and the P2—it has been consistently superb. ”

“This P2 feels astonishingly youthful showing little signs of evolution or softening, There is plenty of fine, pure fruit but the searing acidity takes the lead role bringing aggression but also salinity and drive. Needs time to show its complexities. ”
