Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of lees ageing in the cellars, the wine enters its first phase of interest, Plenitude 1, showing quite youthful fruit and broad texture from the lees contact. The signature Dom Pérignon aromatic is that "hint smoky" character a result of the reductive winemaking where they go to extreme lengths to keep each step of the winemaking process free of oxygen. With every sip of Dom Perignon you always have that purity of fruit character, depending on the vintage you normally see the Pinot Noir fruit dominate, which are those red fruits like raspberry, peach and dark cherry. The Chardonnay adds a supporting layer of chalky texture and delicious fruit in the yellow spectrum like plum, apple and tropical notes of pineapple.

The Plénitude (originally Oenothèque) concept has been years in development at Dom Pérignon. After studying the natural course of ageing that vintage champagne seems to undertake, the winemaking team found that, rather than improving steadily and linearly (as is the case with many wines), it develops and matures through three defined stages in its life.

The first release (P1) comes approximately 8 years after the harvest and is the style that most consumers are familiar with. The second stage (P2) takes roughly 15 years, during which time the cuvée takes a profound leap to a new quality level where it will plateau for many years in terms of improvement. Finally, the third Plénitude (P3) will see the champagne ageing another 20-30 years until it reaches its ultimate peak. Initially these mature vintages were made available under limited release called “Oenothèque” but were re-branded in 2014 as “Plénitude”. Read more about the Plénitude concept here.

Weather: The 2000 vintage was characterised by challenging contrasts between cold and rainy periods and warm and stormy weather. Summer was uncertain and often gloomy but the weather brightened miraculously during the last few days of August, saving the harvest from doom. The 2000 vintage was first released as the 'standard' Dom Pérignon (P1) labelling back in 2008. The second release, Plénitude 2, was then launched in 2017 after an additional nine years of ageing.

Tasting Note: Initially on the nose, warm and lively aromas of brioche and hints of citrus fruits shine through. The palate is vibrant and striking with oranges and peaches combine with toasty notes. A well-balanced and creamy mid-palate lingers long in the mouth.

“The nose hooks you from the first sniff. So much going on there with DP’s hallmark fragrant toastiness running the show. Lovely layers of freshly ground coffee and grilled almonds. Underneath the ripe and mature fruity layers open up with honey, peach marmalade, orange peel and baked apple. There is leesy richness to the plushy texture but it is beautifully complemented by the wine’s energy and freshness. The finish is long, harmonious and invigorating. Truly a complete wine. ”

“The 2000 Dom Pérignon P2 is striking. More importantly, it is absolutely delicious right now. Baked apple tart, brioche, spice, vanillin, ripe pear and crushed rocks all flesh out. Creamy, layered and inviting, with soft, voluptuous curves, the 2000 offers a lot of sheer pleasure. Although, perhaps not quite as complex or structured as the very best P2s, the 2000 is wonderfully alluring. Interestingly, in 2000, the Blanc and P2 are not as different as they typically are. The P2 has a bit more volume and freshness than the Blanc, but both wines share a distinct toasty, slightly reductive character. ”

“The 2000 Dom Pérignon P2 is drinking beautifully, wafting from the glass with complex and gently reductive aromas of iodine, lemon oil, tangerine and oyster shell that have begun to develop appreciable tertiary nuance. On the palate, it's medium to full-bodied, deep and expansive, with a broad attack, incisive acids, a classy mousse and a long, precise and mouthwateringly saline finish. The year 2000 delivered a precocious Dom Pérignon, and this recently disgorged rendition has really benefited from the additional time sur lattes, acquiring notably more complexity—while retaining more energy—than the original disgorgement. Given its maturing profile I would plan to drink bottles within the next decade.”

“This late ‘Plenitude/P2’ release is a category for the house that is apparently ‘not flying but has decent recognition’. This release was disgorged in 2014, so had at least 12 years’ yeast maturation. It was launched in May 2017. ‘Yeast maturation is crucial to Dom Pérignon’, avows Geoffroy, who confessed he was a bit frustrated by the previous P2 release, of 1998, ‘but it’s come a long way’. (See my tasting note in this article on a bottle tasted recently).
A little darker than the regular 2000. Richer than the regular 2000 on the nose – and on the palate too. Smoky nose. Pungent. Very long and vibrating on the palate. Highly luxurious finish.”

“Slate, crushed rocks, apricot jam, mint, honeysuckle and mint are some of the notes that run through the 2000 Dom Pérignon P2. Open-knit, racy and seductive, the 2000 is a rare P2 that will drink well right out of the gate. The reductive character from long aging on the lees that is such a P2 signature adds nuance without overpowering the wine. There is wonderful breadth and amplitude here. In sum, the 2000 presents a striking interplay of the maturity that develops over extended time on lees and freshness. The creamy, seamless finish only adds to the wine’s considerable immediacy and sheer appeal. Baked apple, toast, brioche, pear, smoke, slate and lemon confit add nuances throughout. What a gorgeous wine this is.”

Soft curves and voluptuous fruit add to the wine’s immediacy and sheer appeal. The 2000 is not hugely complex or layered, but it has plenty of palate presence and overall intensity. The 2000 P2 is a terrific choice for readers who enjoy Champagnes that show the more advanced aromas, flavors and textures that develop in bottle. Tasted two times with consistent notes.”
