Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of lees ageing in the cellars, the wine enters its first phase of interest, Plenitude 1, showing quite youthful fruit and broad texture from the lees contact. The signature Dom Pérignon aromatic is that "hint smoky" character a result of the reductive winemaking where they go to extreme lengths to keep each step of the winemaking process free of oxygen. With every sip of Dom Perignon you always have that purity of fruit character, depending on the vintage you normally see the Pinot Noir fruit dominate, which are those red fruits like raspberry, peach and dark cherry. The Chardonnay adds a supporting layer of chalky texture and delicious fruit in the yellow spectrum like plum, apple and tropical notes of pineapple.

The Plénitude (originally Oenothèque) concept has been years in development at Dom Pérignon. After studying the natural course of ageing that vintage champagne seems to undertake, the winemaking team found that, rather than improving steadily and linearly (as is the case with many wines), it develops and matures through three defined stages in its life.

The first release (P1) comes approximately 8 years after the harvest and is the style that most consumers are familiar with. The second stage (P2) takes roughly 15 years, during which time the cuvée takes a profound leap to a new quality level where it will plateau for many years in terms of improvement. Finally, the third Plénitude (P3) will see the champagne ageing another 20-30 years until it reaches its ultimate peak. Initially these mature vintages were made available under limited release called “Oenothèque” but were re-branded in 2014 as “Plénitude”. Read more about the Plénitude concept here.

Weather: The 2002 vintage shaped up ideally over the spring, with no significant frost and near-perfect flowering. Then followed a summer marked by long, sunny periods interspersed with regular cloudy and rainy spells. The vines were in good health and the dehydration of the grape berries helped them reach new heights of ripeness. The 2002 vintage was first released as the 'standard' Dom Pérignon (P1) labelling back in 2011. The second release, Plénitude 2, was then launched in 2019 after an additional eight years of ageing.

Tasting Note: Exotic fruits combine with sweet spice and fresh coriander on the nose, the palate is opulent with bundles of fruits, a creaminess and lemon dominate the mid palate and the finish, like all P2's is long and succulent.

“The 2002 Dom Pérignon P2 is wonderfully open in its aromatics, but a bit less giving on the palate, especially next to the regular release. Lemon confit, white flowers, mint and white pepper open up first, followed by hints of apricot, honey, chamomile and light tropical notes. Interestingly, the P2 is quite a bit less tropical than the original release. Chef de Caves Vincent Chaperon told me he thinks the original release shows more of a buttery character because of the combination of the ripeness of the vintage and the natural evolution of the wine post-disgorgement under crown seal, as opposed to the P2 which stayed much longer on its lees. It is hard to know if that is an exact explanation, but the reality is that the two 2002s are quite far apart stylistically.”

Fine intense creaminess on the sumptuous but linear and persistent finish that shows increasing minerality towards the end. Soft and caressing. At a lovely drinking phase in 75cl bottle, highly youthful in magnum.”

Deep straw. Very much in its mature phase with intense Dom P character, as though a tincture of Dom P! Creamy and round without a single edge to it, Almost spherical in impression and shape. Where lemon meets bergamot on the nose, and both delicate in texture and rich in flavour on the palate. Pure pleasure. Exceptionally long. A bit of a triumph really. A great legacy.”

A really linear wine that initially seemed like a corseted version of 2002 but is actually so intense and concentrated that is tastes like Dom Pérignon squared.”

“The 2002 Dom Pérignon P2 is still a youthful wine, but it is beginning to develop appreciable complexity, wafting from the glass with notes of of iodine, warm bread, ripe orchard fruit, peach, citrus oil, smoke and peat, which in Geoffroy's words "are on the verge of aromatic over-ripeness." On the palate, the wine is medium to full-bodied, broad and fleshy, with a textural, voluminous profile, pinpoint bubbles and a chalky, phenolic finish. This is a ripe and powerful Dom Pérignon that finds its closest stylistic analogy in the 1990 vintage, and it is considerably less evolved than the more tertiary 2000 P2 today. While the P2 is a bit drier and more precise on the finish than the original release, given the wine's slow evolution the difference between the two is less pronounced than it has been for any vintage since 1996.”
