Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of lees ageing in the cellars, the wine enters its first phase of interest, Plenitude 1, showing quite youthful fruit and broad texture from the lees contact. The signature Dom Pérignon aromatic is that "hint smoky" character a result of the reductive winemaking where they go to extreme lengths to keep each step of the winemaking process free of oxygen. With every sip of Dom Perignon you always have that purity of fruit character, depending on the vintage you normally see the Pinot Noir fruit dominate, which are those red fruits like raspberry, peach and dark cherry. The Chardonnay adds a supporting layer of chalky texture and delicious fruit in the yellow spectrum like plum, apple and tropical notes of pineapple.

Weather:The 2003 vintage was one of pre-eminence: a year like no other, defined by extremes. The vineyard was first touched by severe spring frosts that left a lasting mark on the Champagne region before being struck with an unparalleled heatwave. As a result, the crop was perfectly ripe and healthy but left a particularly small harvest: this was the most precocious since 1822.

Tasting Note: The bouquet spirals through a light-filled, floral softness to the minerality that epitomises Dom Pérignon. On the palate, a striking demanding aromatic with bundles of fruits and structure. The finish is long. One of Richard Geoffrey's favourite vintages to create due to the hot weather of the vintage. Very scarce in magnum as one of their smallest magnum bottlings

The bottle shown is a 75cl size Dom Pérignon 2003 The magnums do not have individual branded gift box. If you order 3*1.5L they come in the original cardboard case.

I was hardly surprised to learn that a P2 Edition will be released within the next year or so. “Richard Geoffroy is particularly fond and defensive of this because so few people managed a fine wine in this heatwave vintage and he describes it as ‘a triumph of winemaking! Most exhilarating and satisfying. And it really created a team spirit that has continued to this day’. Yield was only 20 hl/ha. He admits it was released too early. ‘Wait for P2 2003!’ he assures us.
Much less expressive nose than the 2004 so I suggested people tasted it beforehand so that it would not be overwhelmed by the 2004. Great tension. There was some suggestion of a dry spice – a hint of a cinnamon stick. Great balance. It just falls away a little on the end.

“Fresh and fragrant straw and lemon nose, mellow in style with less precision and lower on its usual toasty impact. Lately, it has been developing an exquisite charred complexity. Ripe, fleshy, honeyed fluffy palate with a touch of phenolic bitterness, however, none of the overripe characters of the vintage. Soft acidity and approachable style. Today, overt, monumental and beautifully textured. One of the finest champagnes of the vintage.”
