Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of lees ageing in the cellars, the wine enters its first phase of interest, Plenitude 1, showing quite youthful fruit and broad texture from the lees contact. The signature Dom Pérignon aromatic is that "hint smoky" character a result of the reductive winemaking where they go to extreme lengths to keep each step of the winemaking process free of oxygen. With every sip of Dom Perignon you always have that purity of fruit character, depending on the vintage you normally see the Pinot Noir fruit dominate, which are those red fruits like raspberry, peach and dark cherry. The Chardonnay adds a supporting layer of chalky texture and delicious fruit in the yellow spectrum like plum, apple and tropical notes of pineapple. The 2004 vintage leaves its mark on the history of Dom Pérignon for its ease and generosity.

Weather: In contrast with the previous year, vine growth was regular and progressed without incident, producing bunches of a significant number and size. Whilst the weather remained moderate for some time, with the month of August particularly cool, the vintage was defined by the dry heat of the final few weeks before harvest. Nuanced and precise, Dom Pérignon 2004 is a natural sum of perfectly consistent parts.

Tasting Note: On the nose, aromas of almond gradually develop into classic toasted notes that combine with an abundance of fruit. In the mouth, a youthful grapefruit and lemongrass flavour combines with a creamy crème brûlée edge that is a hallmark of Dom Pérignon from a year where there is ripe fruit. The full taste lingers with the utmost elegance on a spicy note and finishes with crisp acidity. Dom Pérignon 2004 expresses the singularity of the Dom Pérignon style: the tension between youthfulness and maturity and a unique mouth-feel. Compared to 2002 this may well have better ageing potential since it has both forward ripe fruit and a strong balance of acidity.

Just 100 jeroboams of Dom Pérignon 2004 have been released to the UK market. They are individually numbered and presented in a stunning branded wooden gift box (as shown in the bottom left picture). Stored correctly at a constant temperature close to 12°C and protected from light, these jeroboams have the potential to age for more than thirty years and still be relatively youthful in style.

The 2004 doesn't quite have the obvious breeding of the 2008 and 2002, nor the obvious power of the 2003 or 2006, and yet it is harmonious, sublime and totally sensual. ”

White-golden in color, the clear, discreet and subtle nose gives way to dried white rather than yellow fruits, raisins and hazelnuts, as well as to floral and herbal aromas. Less generous and concentrated in the mouth than the 2005 and austerely dry at the moment, the 2004 shows its great finesse and characteristic minerality. There should be a better point of time to praise its class, so trust and keep it!”

“Lily-of-the-valley perfume and scents of lightly toasted brioche and almond rise from the glass of Moet’s 2004 Brut Dom Perignon, along with hints of the apricot, pear and grapefruit that then inform a luscious and creamy yet strikingly delicate as well as consummately refreshing palate. Sweet-saline savor of scallop – also already intimated in the nose – lends compulsive saliva-inducement to a ravishingly rarified and persistent finish, joined by alkaline, nutty, liquid-floral, and nori seaweed notes for a performance of head-scratching subtlety and intrigue. (In case my description hasn’t already made clear, we have here inter alia a fantastic sushi wine.) This will be worth following for at least the next 6-8 years, in the course of demonstrating that iconic status as a luxury brand, and elevated (albeit secret) production numbers by no means preclude a wine of understated as well as profound beauty.”

“Very pale straw gold with surely the most discreet bubbles in the champagne world. Very different from the 2003. A much more recognisable Dom Pérignon sort of nose with fairly intense classic toastiness. Minerals and raciness rather than fruit and body. Marked acidity and even a little lean but very fine. There are notes of iodine and bitter orange peel. This wine really gets saliva flowing. The finish is not massively persistent but overall this is a very well mannered wine. A Chablis of a champagne - which 2003 definitely wasn't! (It was more of a Pouilly-Fuissé.)”

“The 2004 Dom Pérignon continues to develop beautifully. A vibrant, focused Champagne, the 2004 clearly reflects the personality of the year. Freshly cut flowers, white peaches and pears are woven together in a Champagne that impresses for its focus and energy. Chiseled saline note support the crystalline finish. I imagine the 2004 will always remain relatively bright and linear, but at the same time, each time I have tasted it over the last two years the 2004 seems to have a little more body and broader shoulders. The 2004 will appeal most to readers who find the 2002 and 2003 too exuberant. There is a lot to like in the glass.”
