Dom Perignon Vertical - Live Tasting

At the end of 2018 we conducted a large vertical tasting with Richard Geoffrey, now former Chef de Cave of Dom Perignon, Vincent Chaperon, current Chef de Cave and Jancis Robinson MW. We tasted vintages of Dom Perignon from 1990 to 2008. We enjoyed the tasting so much we want to give you the opportunity to taste one of the best Prestige Cuvee champagnes.

Dom Perignon P2 2002: Exotic fruits combine with sweet spice and fresh coriander on the nose, the palate is opulent with bundles of fruits, a creaminess and lemon dominate the mid palate and the finish, like all P2's is long and succulent.

Dom Perignon 2004: On the nose, aromas of almond gradually develop into classic toasted notes that combine with an abundance of fruit. In the mouth, a youthful grapefruit and lemongrass flavour combines with a creamy crème brûlée edge that is a hallmark of Dom Pérignon from a year where there is ripe fruit. The full taste lingers with the utmost elegance on a spicy note and finishes with crisp acidity. Dom Pérignon 2004 expresses the singularity of the Dom Pérignon style: the tension between youthfulness and maturity and a unique mouth-feel. Compared to 2002 this may well have better ageing potential since it has both forward ripe fruit and a strong balance of acidity.

Dom Perignon 2006: Initial impressions on the nose are floral and ripe tropical fruits that open to more candied fruit and toasted notes. On the palate an increasing level of creaminess and complexity develop with time in the glass. This is a champagne showing the true hallmarks of a superb vintage which, given time, will position itself as one of the vintages of the decade

Dom Perignon 2008: Rich fruit. Nose is quite forward, with that trade mark match-strike smokey character subtly coming through. Smokey bacon, pineapple and guava on the palate with underlying ripe lemons and bright red apples, all wrapped around a texture from long lees ageing. Finishes very fresh and light, dances on the palate with a hint of that saline and twist of bitterness which really help balance the delicacy and finish.
