Bought directly from Moët Hennessy, the bottles are stored in bond at London City Bond Eton Park, in ideal conditions at a constant 13°C. For same-day deliveries, small quantities are kept in our office cellar, where the temperature is maintained between 11–13°C. We source all our bottles directly from the Maison or their official UK office, eliminating the risk of poor storage. This is crucial, as champagne quality is highly sensitive to heat: temperatures above 18°C accelerate maturity significantly, which compromises quality.
Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of lees ageing in the cellars, the wine enters its first phase of interest, Plenitude 1, showing quite youthful fruit and broad texture from the lees contact. The signature Dom Pérignon aromatic is that "hint smoky" character a result of the reductive winemaking where they go to extreme lengths to keep each step of the winemaking process free of oxygen. With every sip of Dom Perignon you always have that purity of fruit character, depending on the vintage you normally see the Pinot Noir fruit dominate, which are those red fruits like raspberry, peach and dark cherry. The Chardonnay adds a supporting layer of chalky texture and delicious fruit in the yellow spectrum like plum, apple and tropical notes of pineapple.
Weather: 2008 was dominated by grey, overcast skies – an exception in a decade characterized by bold, generous sunshine. Spring and summer rought the same lack of sunlight and absence of high temperatures. It was September that saved the vintage, belatedly and miraculously. Just when the harvest was getting underway (on September 15), the weather conditions were finally perfect: blue skies and prolonged north-northeasterly winds. Picking was spread out over a long period in order to benefit from this positive turn of events. The grapes were riper than anyone dared hope, and had truly outstanding balance. The vines were in perfect health.

Tasting Note: Rich fruit. Nose is quite forward, with that trade mark match-strike smokey character subtly coming through. Smokey bacon, pineapple and guava on the palate with underlying ripe lemons and bright red apples, all wrapped around a texture from long lees ageing. Finishes very fresh and light, dances on the palate with a hint of that saline and twist of bitterness which really help balance the delicacy and finish.

Based on Grand Cru villages plus one premier cru villages of Hautvillers, a wine of tension, power and long-ageing endurance and has been the vision of talented Chef de Cave, Vincent Chaperon, for over two and a half decades.
Vincent Chaperon 2019 to current | Joined Moët & Chandon in 1999 then in 2005 he joined Dom Pérignon as head of red winemaking for Dom Pérignon Rosé. The 2009 Dom Pérignon Rosé saw a reduction in the still Pinot Noir content to about 10%, down from previous levels that reached up to 28% in earlier vintages like 2004 and 2005. This adjustment aimed to create a Rosé with greater finesse and a more harmonious profile, aligning with Chaperon's vision for the wine. His meeting with Richard Geoffroy proved decisive, the beginning of a thirteen-year apprenticeship during which the two engaged in an ongoing dialogue with one another. The handover took place on January 1, 2019 when Vincent Chaperon became Chef de Cave of Dom Pérignon.
Richard Geoffroy 1990 - 2018 | Joined the Moët & Chandon winemaking team in 1985, working with Dominique Foulon, chef de cave across both Moët and Dom Pérignon Champagnes at the time. Geoffroy's talents were quickly recognized; in 1990, he was named chef de cave of Dom Pérignon, mentored by Foulon until Foulon's retirement in 2000. Geoffroy was known for his 15 vintages of Dom Pérignon.
Dominique Foulon 1975 - 1990 | Under Foulon's guidance, Dom Pérignon produced several acclaimed vintages, including the 1975, which has been recognized for its quality and longevity. Foulon was known for his adherence to traditional Champagne-making techniques and his focus on creating wines with balance and aging potential. His approach laid the groundwork for the innovations that Geoffroy and subsequent Chefs de Cave would introduce. He played a crucial role in mentoring Richard Geoffroy.

“Unquestionably the finest Dom Pérignon of the decade, the 2008 Dom Pérignon is drinking brilliantly today, wafting from the glass with notes of citrus oil, ripe orchard fruit, peach, buttered toast, pastry cream, iodine and smoky reduction. Full-bodied, rich and fleshy, it's vinous and layered, with a deep core of sweet fruit, racy acids and a long, saline finish. The 2008 is aging very gracefully.”

“The 2008 Dom Pérignon is a huge, powerful Champagne and also clearly one of the wines of the vintage. This is one of the most reticent bottles I have tasted. So much so that I am thinking about holding off opening any more bottles! The 2008 has always offered a striking interplay of fruit and structure. Today, the richness of the fruit is especially evident. Readers who own the 2008 should be thrilled, but patience is a must.”

“The 2008 Dom Pérignon is once again stunning. More than anything else, I am surprised by how well the 2008 drinks given all the tension and energy it holds. Then again, that is precisely what makes 2008 such a unique vintage – namely that the best wines are so chiseled and yet not at all austere. Lemon peel, almond, mint, smoke and crushed rocks are all finely sculpted, but it is the wine’s textural feel, drive and persistence that elevate it into the realm of the sublime. The 2008 will be even better with time in the cellar, but it is absolutely phenomenal even today, in the early going. Three recent bottles have all been nothing short of magnificent. ”

“There is a striking easiness to this seductively fruity and soft vintage of Dom Pérignon that from first sight might come across obvious. Overt, inviting nose of pristine, sunkissed fruit with exotic fruit nuances. At this early stage it comes with a delicately toasty undertone with ripe peach, lemon sorbet and yellow apple. Plush, rounded and succulent palate with caressing mousse. Plenty of appeal on the intense, crisp-enough, wide open palate that is beautifully textured. At a closer look there is in-built power underneath the first impression of a charm and warmth. Highly enjoyable already now with many more nuances waiting to be revealed over time. ”

“This keenly-anticipated wine has deliberately been held back to be released after the Dom Pérignon 2009 and in fact will not be released commercially until towards the end of 2018 (although it already seems pretty good to me). Geoffroy reminded me that the growing season was no picnic - in fact he described all but the end of it as 'miserable' because it was so overcast and the disease pressure was so high. Fine weather at the end finally ripened the grapes though acid levels were notably high. I wondered whether, since the grapes were harvested just as the global financial crisis was beginning to bite, they reduced the quantity made of Dom P, but no. 'We made lots!', he assured me. Brisk, tiny mousse. Notably rich nose - very Dom P! There's a hint of something marine on the nose (Michael Broadbent's oyster shells?) and then extremely tight and lacy - it somehow reminded me of a sponge because of springy texture. Masses of energy here, as well as the usual flirtatiousness. It will continue to open out, I'm sure. I tasted it very cool and then went back to it at almost room temperature a couple of hours later and it stood up extremely well. The official Geoffroy description of this vintage is 'athletic' and 'vertical'. 'All 2008s are bright in terms of fruit; we want ours to shine white light. We have deliberately warmed it up a bit, working on the muscle to better integrate the acidity.'”

“The 2008 Dom Pérignon is fabulous, but quite remarkably, it was even more open when I tasted it a year ago. Bright, focused and crystalline in its precision, the 2008 is going to need a number of years before it is at its best. Lemon peel, white flowers, mint and white pepper give the 2008 its chiseled, bright profile. Several recent bottles have all been magnificent. What I admire most about the 2008 is the way it shows all the focus, translucence and energy that is such a signature of the year, and yet it is also remarkably deep and vertical. In other words, the 2008 is a Champagne that plays in three dimensions.”
Dom Pérignon 2017 looks set for an intriguing evolution and is unlikely to remain on the market for long as attention turns to the 2018 release. Some great scores from wine writers.
