Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of lees ageing in the cellars, the wine enters its first phase of interest, Plenitude 1, showing quite youthful fruit and broad texture from the lees contact. The signature Dom Pérignon aromatic is that "hint smoky" character a result of the reductive winemaking where they go to extreme lengths to keep each step of the winemaking process free of oxygen. With every sip of Dom Perignon you always have that purity of fruit character, depending on the vintage you normally see the Pinot Noir fruit dominate, which are those red fruits like raspberry, peach and dark cherry. The Chardonnay adds a supporting layer of chalky texture and delicious fruit in the yellow spectrum like plum, apple and tropical notes of pineapple.

The Plénitude (originally Oenothèque) concept has been years in development at Dom Pérignon. After studying the natural course of ageing that vintage champagne seems to undertake, the winemaking team found that, rather than improving steadily and linearly (as is the case with many wines), it develops and matures through three defined stages in its life.

The first release (P1) comes approximately 8 years after the harvest and is the style that most consumers are familiar with. The second stage (P2) takes roughly 15 years, during which time the cuvée takes a profound leap to a new quality level where it will plateau for many years in terms of improvement. Finally, the third Plénitude (P3) will see the champagne ageing another 20-30 years until it reaches its ultimate peak. Initially these mature vintages were made available under limited release called “Oenothèque” but were re-branded in 2014 as “Plénitude”. Read more about the Plénitude concept here.

Weather: 2008 was dominated by grey, overcast skies – an exception in a decade characterized by bold, generous sunshine. Spring and summer rought the same lack of sunlight and absence of high temperatures. It was September that saved the vintage, belatedly and miraculously. Just when the harvest was getting underway (on September 15), the weather conditions were finally perfect: blue skies and prolonged north-northeasterly winds. Picking was spread out over a long period in order to benefit from this positive turn of events. The grapes were riper than anyone dared hope, and had truly outstanding balance. The vines were in perfect health.

It stretches beautifully across the palate, concluding with a mouth-watering citrus twist. A glorious Dom Pérignon, where the extra time on lees has contributed exceptional fullness and texturedness. - Tasted by Essi Avellan MW
Uniquely only available as a vintage champagne produced in exceptional years from just two grape varieties, Chardonnay and Pinot Noir, Dom Pérignon is an iconic wine with an unrivalled heritage. Often considered one of the founding fathers of Champagne itself, the Benedictine Monk Dom Pierre Pérignon spent forty-seven years working between 1668 and 1715 in the historic Abbey of Hautvillers pursuing his ambition to create the "best wine in the world".

Based on Grand Cru villages plus one premier cru villages of Hautvillers, a wine of tension, power and long-ageing endurance and has been the vision of talented Chef de Cave, Vincent Chaperon, for over two and a half decades.
Chef de Cave History at Champagne Dom Perignon:

Vincent Chaperon 2019 to current | Joined Moët & Chandon in 1999 then in 2005 he joined Dom Pérignon as head of red winemaking for Dom Pérignon Rosé. The 2009 Dom Pérignon Rosé saw a reduction in the still Pinot Noir content to about 10%, down from previous levels that reached up to 28% in earlier vintages like 2004 and 2005. This adjustment aimed to create a Rosé with greater finesse and a more harmonious profile, aligning with Chaperon's vision for the wine. His meeting with Richard Geoffroy proved decisive, the beginning of a thirteen-year apprenticeship during which the two engaged in an ongoing dialogue with one another. The handover took place on January 1, 2019 when Vincent Chaperon became Chef de Cave of Dom Pérignon.

Richard Geoffroy 1990 - 2018 | Joined the Moët & Chandon winemaking team in 1985, working with Dominique Foulon, chef de cave across both Moët and Dom Pérignon Champagnes at the time. Geoffroy's talents were quickly recognized; in 1990, he was named chef de cave of Dom Pérignon, mentored by Foulon until Foulon's retirement in 2000. Geoffroy was known for his 15 vintages of Dom Pérignon.

Dominique Foulon 1975 - 1990 | Under Foulon's guidance, Dom Pérignon produced several acclaimed vintages, including the 1975, which has been recognized for its quality and longevity. Foulon was known for his adherence to traditional Champagne-making techniques and his focus on creating wines with balance and aging potential. His approach laid the groundwork for the innovations that Geoffroy and subsequent Chefs de Cave would introduce. He played a crucial role in mentoring Richard Geoffroy.

André Bavaret 1940s – 1950s | One of the earliest cellar masters linked to the refinement of Dom Pérignon’s early vintages.

“In 2008 there was no clear dominance for Pinot Noirs origins and Hautvillers only contributes a small proportion to the blend. For Chardonnays, Chouilly, Cramant and Le Mesnil play a big role alongside Sillery, which is unusually prominent this year. The nose is captivating with glorious yeasty, reductive complexity and notes of sweet lemon-curd pastry, vanilla, and a touch of crunchy pineapple. The palate is rich and silken, lifted by a beam of laser-like acidity and a sizzling sensation of minerality. It stretches beautifully across the palate, concluding with a mouth-watering citrus twist. A glorious Dom Pérignon, where the extra time on lees has contributed exceptional fullness and texturedness.

“The 2008 Dom Pérignon P2 is a stunning, riveting wine. Bright, crystalline and focused, the 2008 dazzles from start to finish. Crushed rocks, slate, mint, dried herbs, lemon oil and oyster shell sizzle with tension. A Champagne of linear focus and cut, the 2008 is absolutely stunning. The original release of the 2008 was a total knockout; now, some years later, the P2 edition takes all of its inherent qualities and amplifies them, while also adding new layers of complexity. This is unforgettably profound.”

“The 2008 Dom Pérignon P2 is another sublime Champagne from Dom Pérignon. Long lees-aging on the cork softened the edges that the original 2008 release showed as a young Champagne. The two 2008s (original release and P2) paint two very different but equally compelling portraits of the vintage. The P2 possesses notable textural density and a level of mid-palate intensity that the 2008 does not offer. The P2 is not necessarily better than the original release, but it is quite contrasting in style. It may be that in a very high-quality vintage, extended time in bottle does not add as much as it does in slightly lesser years.”

“A wine I’m inclined to call “long-range,” the 2008 Dom Pérignon Pleenitude 2—an equal blend of Chardonnay and Pinot Noir, disgorged in March 2024 with a dosage of five grams per liter—has fulfilled its considerable promise. Born of a cool, slow-ripening season that endowed the wine with its incisive acid spine and raciness, perfected through the selection of origins that contribute the texture and plenitude only real maturity can impart, it wafts from the glass with aromas of orange, nashi pear, honeysuckle and toasted hazelnut, mingling with brioche and a touch of smoky reduction. On the palate, it is full-bodied, multifaceted and vividly bright, with a layered, concentrated core of fruit, its ripe yet racy acids and pinpoint mousse carrying it to a long, searingly chalky finish.

If the 1996 Plenitude 2 was a success at Dom Pérignon, then the 2008 Plenitude 2 appears to surpass that, ranking among the greatest achievements of Richard Geoffroy, the house’s former cellar master. All in all, it is more energetic and incisive than the 2002 Plenitude 2 was on release, and anyone fortunate enough to secure a bottle will have no difficulty finishing it.”

“This late-release version of the magnificent 2008 is to be put on the market commercially in 2026. Disgorged in 2024 with a dosage of less than 5 g/l – like all four of these 2026 releases. A famous 'classic' vintage. The product of a season that saw cloudy weather for much of it with considerable mildew pressure. Then there was a great September that saved the vintage – a Champagne miracle. A sunny last three weeks changed the mood in Champagne. 'Climate change has been giving more flesh and length to the wines', according to Vincent Chaperon who said that he and the then chef de cave Richard Geoffroy used to liken this wine's muscle to the athlete Usain Bolt.

Greenish hue. Very concentrated and evolved, lightly smoky and creates an immediate impression. Dry, serious finish. Extremely tight bead. Very bright fruit. Citrus, even lime. A wine that is tightening up, a bit like a drawstring with tension – like when a bow is drawn back by an arrow. A very grown-up Dom Pérignon. (JR)”

“The extra seven years of ageing on lees under cork versus the original Dom Pérignon 2008 release has wrapped up all the
year's innate tension and brightness in an unabashedly decadent, enveloping richness of toasted nuts, fresh dough and
gentle oyster cream, although the precision and integrity of the vintage is absolutely present too. There are beautiful
aromas of pure red strawberry and bergamot with some darker mocha notes emerging, both Chardonnay linearity and a
surprisingly fragrant Pinot finding a perfect equilibrium. The palate carries the buzzing acidity of 2008 on a time-softened,
ultra-silky mousse, with new details of umami savour tucked in subtly to the overall impression of glacial freshness.
Perhaps unsurprisingly given the reputation of the original release, this is among the most memorable and energetic of The
Plénitude released made since the program of late releases took the name in 2014.”
