A non-vintage champagne is made every year, at its core is one dominant vintage. A non-vintage allows a champagne House to make a champagne every year because the reserve wines help temper the highs and lows of mother nature. The dominant three grape varieties in Champagne are Chardonnay and two red grapes, Pinot Noir and Meunier.
