Champagne's first, finest and rarest Blanc de Blancs, Salon is the legacy of one man who devoted his life to creating the perfect pure-Chardonnay champagne. Produced from grapes grown on the deep chalk soils of Le Mesnil, still one of Champagne’s only Grand Cru villages, the apparent simplicity of this formula belies the challenges inherent in creating a wine of Salon’s complexity. Made on average only three times per decade, Salon Le Mesnil Blanc de Blancs 2006 is only the fortieth vintage of Salon in history. Just 53,000 bottles of Salon were produced in 2006. The 2007 vintage is the 41st Salon to be released from this tiny champagne house in Le Mesnil-sur-Oger. Blanc de blancs in its purest form, the wine bears all the hallmarks of a classic Salon – the unmistakeable bone structure, the delicate-decadent fragrance, the elegance belying power beneath. The 2008 is only released in magnum format and available in this case.

Tasting the vins clairs in early 2009, Président Didier Depond and Chef de Cave Michel Fauconnet were immediately struck by their profile, comparable in stature to the legendary Salon 1982, Salon 1966 and Salon 1928. They decided almost instantly to bottle the entire production in magnums, the ideal format to confer the slow, delicate élevage appropriate to the vintage, and their absolute commitment to quality. This would result in just 8,000 magnums being produced, a commercial headache, but one that would surely be addressed by subsequent vintages, by way of cosmic compensation. However, the following trio of vintages refused to kowtow to the law of averages:
2009, 2010 and 2011 all fell short of Salon’s exacting standards, and were not made.

Alongside Salon 2008 in magnum, this special collection brings together recent and final disgorgements of the three receding Salon vintages – 2007, 2006, 2004 – marking the last time these vintages will be released for sale.

Weather: After a rainy but mild winter without any prolonged cold spells, spring arrived with some very localised frosts. Cool weather returned in June and the infrequent sunshine prolonged the feeling of freshness. The spring to autumn weather was bright with sunny spells and the long, hot days and cool nights during September gave the grapes excellent acidity during the harvest period. The 2008 vintage is fast emerging as one of the best since the renowned and now-legendary 2002.

Tasting Note: Familiar characteristics of Salon are present with the scent of jasmine, warm brioche and the signature twist of ginger. The complex flavours on the palate, tropical fruits and a creamy mousse mouthfeel feel. Given a few more years, this will become more open and forward, Salon given time is very rewarding.

“Magnum. Disgorged (‘Edition’) January 2019. Just 8,000 magnums and no bottles produced. (Usually 60,000 bottles!) Didier Depond tasted the grapes with Chef de Cave Michel Fauconnet. Both of them decided that only magnums should be made because the concentration is so great. Like 1982. Dosage 6.2 g/l. Didier Depond calls 2008 ‘the dream vintage’. Picked from 17 September.
Big bubbles. Strong hedgerow aromas. Very ‘cool’ impression. Very intense and persistent. Complex and lacy. Filigree texture. Really quite open for a magnum - particularly for Salon. Wonderful length. Certainly a magical wine, likely to feed a frenzy among (well-heeled) investors.”
