Ulysse Collin Les Maillons Blanc de Noirs Extra Brut NV

Ulysse Collin's home is in the village of Congy in the Coteaux du Petit Morin, 30 kms south-west of Epernay. The business is managed by the talented head of the business Olivier Collin. The principles of singularity and expressing terroir are nowadays the signatures of his estate Olivier produces exclusively single-vineyard champagnes made from naturally farmed fruit using sustainable farming practices.

His work in the cellar is similarly straightforward, with an emphasis on minimal interference. He uses native yeasts and as little sulphur as possible (the aim is 50–65 mg/l), and the wines are topped off with minimal dosage (a maximum of 2.4 g/l) and bottled at a lower pressure than most. All of his base wines come into contact with oak and the reserve wines are aged in barrels and casks. Each cuvée is disgorged twice a year, the perfect time being mid-February, “when it is cool and there is less oxidation risk” and before “temperatures and workloads in the vineyard increase.”

This cuvee of Les Maillons is a Pinot Noir from a 6 hectare lieu dit, in the Coteaux du Sezannais which has clay soils over chalk, Olivier mentions the Coccoliths in the soft chalk being the major influence on the champagnes personality. Olivier owns 2.5 hectares here, and these vines average 40 years old. Super concentration, floral and enchanting.

Tasting Note: Initially you see aromas of pear, redcurrants with some spice and nuttiness. The palate is richly textured, lots of flavour of plum and dark red fruits and hints of spice and toast. Good length a great balance of freshness with power of fruit. Pairing with light dishes, scallops and shellfish will bring out the best of this champagne.

“Disgorged in March 2020 with 2.4 grams per liter dosage, the NV Extra Brut Blanc de Noirs Les Maillons (2016) is based on the 2016 vintage, complemented by 50% reserve wines from 2015. Wafting from the glass with aromas of mirabelle plum, clear honey, toasted almonds, vanilla pod, mandarin, nutmeg and apricot, it's full-bodied, fleshy and enveloping, with a concentrated core of fruit, racy acids and a lovely pinpoint mousse. Charming and demonstrative, it's also one of the most precise renditions of Les Maillons produced to date. At fully 18,500 bottles, this is Collin's largest cuvée.”
