Domaine Evremond launched at Westminster Abbey in 2015, making English Sparkling Wine history. A unique partnership between Champagne Taittinger and their British friends, Hatch Mansfield, this marked the first time that a Champagne house had invested in the United Kingdom with the ambition of producing a top quality sparkling wine. It is an endeavour bonded by history, friendship and collaboration, with authenticity and a sense of place at its heart.
Domaine Evremond takes its name from Charles de Saint-Évremond (1613-1703), a Frenchman and the first true ambassador for the wines of Champagne, who fuelled its popularity in England at the court of Charles II. A poet, epicurean and literary critic, he was buried in Poet’s Corner in Westminster Abbey. The Taittinger family, passionate historians, have always been inspired by the Evremond story and named their own historic venture in his memory.
Behind the label: The label for Domaine Evremond Classic Cuvée was inspired by archived imagery of the figure who gave the estate its name: Charles de Saint-Évremond. The label’s oval shape mirrors the frame of his 1659 portrait by Pieter van Gunst, while the estate’s emblem, the cinquefoil (a heraldic five-petalled flower), is fashioned after Charles de Saint-Évremond’s crest.
Location and Winery: With the perfect combination of deep, free draining chalk soils, south facing slopes and the ideal altitude some 50 to 90m above sea level, the original site of Stone Stile Farm's apple and pear orchards, close to the archetypal Kent village of Chilham became the natural home to establish the Domaine Evremond estate. Situated in an area of outstanding natural beauty the winery, along with the Cellar Door, is located at the heart of the estate. Designed by a leading French architect and built by an expert UK team, it is a true example of collaboration in the spirit of Domaine Evremond. Built with sustainability at the fore, the majority of the sympathetically designed winery is subterranean and provides a natural gravity-led winemaking process. The design allows an uncompromising approach to quality winemaking.
The Wine: The Classic Cuvée expresses the heart and soul of Domaine Evremond. The Kentish terroir, with its chalky soils mixed with flints and oceanic influence, is expressed through the wine’s minerality and precision. The wine is fermented and matured entirely in stainless steel vats and undergoes malolactic fermentation.
Weather in 2021: The 2021 growing season was defined by low pressure weather systems bringing a wetter and cooler year, with the vines now ageing they produced a smaller harvest but with good ripeness. It was also the second year where the grapes were pressed on site at the new winery in Chilham.

Tasting Note: Surprisingly rich, creamy nose – a nod to Comtes de Champagne?! Much broader than Edition I, arguably less refreshing in fact, but a wine for food perhaps? (It’s not to be released for a few months.) So ripe, I’m not sure I would guess it was English if served it blind. The nose is already quite complex – amazingly so for an unreleased wine!.
