Sam and Ben Ellis founded Everflyht Vineyard in 2015, coming from a background in modern property development. The estate is ten hectares with three hectares planted in 2016 of the classic varieties Chardonnay, Pinot Noir and Meunier. In 2021 an additional 3.8 hectares were planted. The young vines produced a small crop in 2018 and this wine was kept as reserve wine to be blended with the wines from the 2019 harvest to create their first non vintage blend based on 2019 blended with the wines from the first vintage.
The Everflyht Cuvée Edition 3 reflects the current estates planting which combines Pinot Noir, Chardonnay and Meunier; Hand-picked from their single estate vineyard and created in a low intervention method while using steel new and old oak to bring the best from each variety and block.
Weather: The 2021 English sparkling wine vintage was shaped by a cool, wet growing season that tested vineyard teams across the country. A late spring and challenging summer brought significant disease pressure and reduced yields, but a favourable spell of dry weather during September and October allowed fruit to ripen steadily and be harvested in good condition. The resulting wines are characterised by bright natural acidity, freshness and precision, with citrus and green orchard fruit flavours, strong mineral expression and excellent ageing potential. While not as generous as warmer vintages such as 2018 or 2020, 2021 is widely regarded as a classic cool-climate, "grower's vintage" that rewarded meticulous vineyard management and is expected to produce elegant, long-lived sparkling wines.

Tasting Note: On the nose, delicate aromas of orchard fruits, green apple and ripe pear are complemented by hints of citrus zest and freshly baked brioche. The palate is refined and balanced, with a fine mousse and bright acidity that lifts the wine. Subtle notes of stone fruit and toasted almond add further dimension, leading to a crisp, lingering finish.

The second phase of planting also saw Pinot Gris, Pinot Précoce and, interestingly, Gamay join further plantings of the big trio of sparkling grape varieties. Sam and Ben's ethos “is to always go with what we like to drink ourselves”. With Sam and Ben enjoying both light reds and still rosé (in addition to the obvious sparkling wine interest), the hope is to produce a small range of limited-release still wines when the season allows.
The name ‘Everflyht’ is inspired by the six Martlets of the Sussex crest symbolising knowledge, adventure, and learning. Said to never land, these birds are ‘ever in flight’. These six Martlets make up the Everflyht feather, a symbol of the house's adventures and innovation in wine and to never settle.
