Wiston Estate Overview
+
This wine has been aging in Wiston's cellars for 3 years, fermented in 5-6 year old Puligny-Montrachet barrels, giving it the ability to gain character over time. The classic champagne varieties and a very low dosage at disgorging, enable the clarity of the fruit to shine through. On the nose, brioche aromas combine with flowers and toasted hazelnuts and that distinctive toasty note from barrel fermentation. The palate has loads of dried citrus fruits, beautiful lemon concentration with hints of tropical fruits and orange and that lovely toasty richness suggesting French patisserie custard and pastry notes. Expect to age very elegantly and continue to develop and even fuller palate for many year to come, though even now when young it is very easy to drink.

Grape Varieties: 33% Chardonnay, 45% Pinot Noir, 22% Pinot Meunier
Dosage: 6 g/L
Disgorged: August 2015

“Much rounder and fuller than the NV brut, with a very prominent acidity thanks to very low dosage. This would be austere if it wasn't for the luscious fruit and generous complexity. Stylised and avant-garde - but delicious.”

“A cuvée of Pinot Noir, Pinot Meunier and Chardonnay made on the South Downs by Irish winemaker, Dermot Sugrue, this is a complex, toasty, savoury fizz with fine bubbles, lots of yeasty, bready autolysis and a bone dry, tapering finish. A winery that deserves to be every bit as famous as Nyetimber, Camel Valley and Ridgeview. ”
