Part 2 of 4 films following our visit to the English Sparkling winery Harrow & Hope.

Richard Bampfield MW and Henry Laithwaite head to the cellar for a juice tasting straight form the vineyard as they discuss the methods used for picking and fermentation.

The English winery ferment separately, in small stainless steel tanks, all the different areas of the vineyard, and all three different grape varieties, so that when it comes to blending they have as many options as possible available to them. Harrow & Hope also ferment about 30% of their wines in aged oak ‘Bordelaise’ barrels to give extra character and complexity to the final wines.
