Our new olive oil range and how it compares to winemaking.

We at The Finest Bubble have recently started selling a range of Extra Virgin Olive Oils by the bottle. Increasingly popular, these condiments are becoming must-haves for either cooking, drizzling or dipping.  We are happy to offer an array of luxury oils from wineries in who we stock wines from.

Most of the world supply of olive oil is produced in the countries of the Mediterranean basin, but some is produced in California, South America, New Zealand, and Australia. Leading producers include Spain, Italy, Greece, and Tunisia.

Wine and olive oil share similarities in how the olives and grapes are grown, harvested, crushed, bottled and tested for purity and quality since they both require a similar climate. However, one of the biggest differences between the two is that olive oil does not improve with age, like wine.

Olive Oil

Think of how different grapes produce different-tasting wines; it’s the same with olives and olive oils. The taste will differ depending on the olives used.

Probably the most widely-used oil in cooking, olive oil is pressed from fresh olives. Much like wine-making, climate, soil and the way the olives are harvested and pressed all have an impact on an oil’s character. Olive oil is assessed on three criteria – fruitiness, bitterness and pepperiness – the flavour, smell and colour can vary radically, both according to its origin, as well as whether it’s extra virgin (the finest grade) or not. Our range of oils are all Extra Virgin (EVOO) which means it is the least- processed and most rich-tasting olive oil. Quality cold-pressed EVOO must have an acidity level of 0.8% or less, and the lower the acidity levels, the higher the quality.

Generally speaking, the hotter the country, the more robust the flavour of the oil. It is also possible to flavour olive oil with herbs and spices by steeping them in the oil for ten days or so (though chilli needs far less time).

–Fontodi Organic Extra Virgin Olive Oil Chianti Classico 2024

–Fontodi Organic Correggiolo Extra Virgin Olive Oil Chianti Classico 2024

Though they have always made wine and oil, their original business was and is the production of Chianti’s finest terracotta at their factory in Ferrone. The same attention to detail that makes them the best producers of terracotta has been brought to bear on Fontodi and has transformed a crumbling farmhouse with a few hectares of vineyards and olive groves into one of Chianti Classico’s most impressive estates, now with 10,000 olive trees.

Managed by Giovanni Manetti, who has run the property since 1980, the wines and olive oil are as meticulously made as the vineyards, olive groves and cellar are immaculately tended. This olive oil is made from a field selection of the best Correggiolo olives from three groves in the Fontodi estate in Panzano. The three groves are among the highest on the estate, and all cool sites. They sit between 400 and 500 metres above sea level. Two groves are southwest facing while the third is north facing. The olives are selected by Giovanni “in the field” during the season, with the same approach used to make his Flaccianello wine.

–Felsina Berardenga Organic Extra Virgin Olive Oil 2024

Fèlsina Berardenga is a 470-hectare estate northeast of Siena, in the commune of Castelnuovo Berardenga on the southern border of Chianti Classico. Fèlsina epitomises the powerful style of southern Chianti.

There are three separate “grove units”(Boschi, Fèlsina, Pagliarese), each with distinctive soils and weather, and three different terroirs for each olive variety. The olive groves cover 47.2491 hectares, totalling 6,923 trees. The oil is composed of 55% Correggiolo, 25% Leccino, 10% Moraiolo & 10% Pendolino.

The wine we offer is Felsina Berardenga Rancia Chianti Classico Riserva 2018

–Poggiotondo Organic Extra Virgin Olive Oil 2024

The Poggiotondo estate covers 70 hectares on the western hills of the Chianti region. Alberto Antonini, the owner and winemaker at Poggiotondo makes his Poggiotondo wines and oil in a modern style, whilst adhering to the true regional characteristics of the Chianti region in which the grapes and olives are grown. The extra virgin olive oil that is produced at Poggiotondo is made from 40% Frantoio, 30% Leccino, 20% Moraiolo & 10% Mignola, the latter variety is grown only in the region of Cerreto Guidi where Poggiotondo is located, and is very intense in aroma and flavour.

The wine that we sell at The Finest Bubble is Poggiotondo Chianti Riserva Vigna delle Conchiglie 2018.

The Poggiotondo estate has 3,000 olive trees planted with Frantoio and Mignola. The typical fruity flavour comes from the Frantoio variety. The groves are situated 200-300 metres above sea level. The low lying hills on the northern side of the Arno Valley provide one of the warmer micro-climates in Tuscany, giving oils that are fuller and richer than those from further inland but still with the characteristic pepperiness of good Tuscan oil. The estate has been certified organic since 2014.
